Celebrate Summer with S’mores Stuffed Strawberries

A giant strawberry dipped in chocolate, stuffed with homemade marshmallow cream, and sprinkled with graham cracker crumbs: “S’mores Stuffed Strawberries” are strawberry shortcake and s’mores all mixed together, and the perfect epitome of early summer delights.

Select large and attractive strawberries for your S’mores Stuffed Strawberries, the larger and prettier the better (Jessica’s recipe calls for 2 pounds). Cut off the hull and scoop out a bit of the center of each berry, being careful to leave it intact. Place it on parchment paper while you prepare the marshmallow filling. Egg whites and sugar are first mixed, then heated, and finally beaten with a mixer until the mixture is stiff and reminiscent of marshmallow fluff. When the filling has reached this stage, put it into a pastry bag and pipe a bit into each strawberry.
Melt some chocolate in the microwave and stir it until smooth. Then dip the end of each filled berry into the chocolate. Return the berries to the parchment paper, sprinkle them with crushed graham crackers, and let the chocolate harden. Jessica recommends placing them in the refrigerator before serving.
Since healthy fruit is at the heart of this seemingly decadent dessert, you can indulge with a minimum of guilt. But don’t hesitate, as strawberries are now at the height of their season.
