Try This in Your Cone: Avocado Ice Cream

Summer and ice cream go together like cookies and milk, but unlike the simplicity of the age-old snack combination, ice cream can get fairly unorthodox in terms of flavor. From chunky monkey to classic chocolate, what else is there, really? Well, though those flavors are delicious, they seriously lack in necessary nutrition. As a result, top chefs have incorporated plenty of fresh fruits into the classic summer treat, but one of them stands out the most: The avocado.

Avocado Ice Cream

  • One 8-ounce avocado, pitted and sliced
  • 14 ounces of sweetened condensed milk
  • 2 tablespoons of fresh lemon juice
  • 2 cups of cold heavy cream
  • Pinch of salt

First, chill a nine by five by three inch loaf pan in the freezer for approximately thirty minutes. While that is chilling, puree the fruit, milk, lemon juice, and salt in a blender until it is fairly smooth. Transfer this mixture to another bowl.

As that pureed mixture sits, use an electric mixer to whip the heavy cream until fluffy peaks begin to form. Taking the resulting whipped cream, transfer approximately one cup of it into the pureed mixture–fold it in accordingly. Once that mixture is lightened, combine it with the remaining whipped cream. Evenly distribute this almost ice cream into the loaf pan; place it into the freezer for at least four hours. If you can wait that long, you will enjoy a creamy, healthy summer snack that is vastly underestimated!

There is no denying that credit has been given to the avocado heavily over the past decade, and the craze is far from over. In fact, avid enthusiasts of the fruit have crafted even more ways to enjoy its creamy goodness, including dessert! So head to the grocery store, grab some avocados, skip the guac, and try these instead:

Avocado BLT Toast

Depending on your party size, this recipe is subject to change in matters of portion, but certainly not when it comes to simplicity. Typically, this is what you need:

  • Slices of bread, toasted to your liking.
  • Strips of bacon that have been either baked or fried.
  • One or more avocados, sliced in fanned strips.
  • Fried eggs, one per piece of bread.
  • Chopped lettuce.

After collecting your mise en place, it is time to assemble your breakfast of champions. First, take your toasted bread and lay it flat; next, place the fried egg on the bread, pile one or two strips of bacon onto the egg, place a nice shred of lettuce atop the bacon, and complete the perfection with sliced avocado.

Fried Avocado Bites

  • 3 avocados, diced.
  • Salt to taste
  • 2 tablespoons of lime juice
  • 2 tablespoons of sugar
  • 1 tablespoon of Asian fish sauce
  • 1/2 tablespoon of Asian chili garlic paste
  • 3/4 cup of flour
  • 1 whole, large egg
  • Canola oil for frying
  • 1 cup of seltzer water

Prepare a frying pan with the oil and set on medium heat; crack the egg and beat it in a small bowl; dice the avocado. In a medium mixing bowl, combine the seltzer water with the flour and salt, and mix until well blended. Begin dipping the avocado pieces into the egg wash, then coat them in the flour. Fry them until they are golden brown.

For the dipping sauce, whisk the sugar, lime juice, Asian fish sauce, and Asian chili-garlic paste in a small bowl. Serve hot along with the dipping sauce and enjoy!
